By shadowing with Chef Marc and his team in the Huddle, you will have the opportunity to gain first-hand experience in management and operations in the restaurant industry. You will get a behind-the-scenes look at the Huddle Café’s day-to-day operations, including purchasing and the financial structure of the restaurant business. Learn about hospitality initiatives, marketing strategies, hiring the right attitude for the operation, menu planning, seasonal objectives, production standards, and gain an understanding of specs and layouts.
